Can you roast okra?

Why: On "The Biggest Loser," Bob & Jillian said you can steam vegetables or you can roast them. "Put em in the oven raw and they'll come out all crunchy and delicious." I have okra in my freezer.

Answer: Apparently! Two easy recipes:
  1. Preheat oven to 425. Cut okra to 1/3-inch thick. Drizzle with olive oil and sprinkle with salt and pepper. Bake for 10-15 minutes.
  2. Preheat oven to 500. Mix together:
  • 1 tablespoon olive oil
  • 1 tablespoon water
  • 1/2 tablespoon ground coriander
  • 1 teaspoon ground cumin
  • 1/4 teaspoon salt or herb salt
  • 1/4 teaspoon cayenne
Toss okra, then spread on a baking sheet. Spray with olive oil and bake 10-12 minutes, occasionally shaking the pan.
