Why: On "The Biggest Loser," Bob & Jillian said you can steam vegetables or you can roast them. "Put em in the oven raw and they'll come out all crunchy and delicious." I have okra in my freezer.
Answer: Apparently! Two easy recipes:
- Preheat oven to 425. Cut okra to 1/3-inch thick. Drizzle with olive oil and sprinkle with salt and pepper. Bake for 10-15 minutes.
- Preheat oven to 500. Mix together:
- 1 tablespoon olive oil
- 1 tablespoon water
- 1/2 tablespoon ground coriander
- 1 teaspoon ground cumin
- 1/4 teaspoon salt or herb salt
- 1/4 teaspoon cayenne
Toss okra, then spread on a baking sheet. Spray with olive oil and bake 10-12 minutes, occasionally shaking the pan.Source: AllRecipes, Cooking-Books
The More You Know: The word gumbo comes from the Bantu word (ki)ngombo, meaning "okra."
